Prepare a solid base fro your pizza oven, free of infiltrations of humidity and with a large enough surface to support the chosen oven, insulation, and exterior facing.
The photo shows a metal structure suitable for supporting the complete pizza oven, and permitting movement when finished.
Form an insulating slab of at least 5 cm thickness in concrete made from cement 4.25, expanded clay 3 to 8 mm, and sand.
Position the floor elements assembled together in the centre; apply refractory cement below the floor over the entire surface and between the joints of the various items. Remove excess cement from joints with a damp sponge to form a smooth surface.
Position the dome components, engaging the various interlocking elements and inserting a small quantity of refractory cement into the joints. There must be no excess cement inside the dome. Fill the joints between the various parts only from the outside of the dome.
Position the two side shoulder elements, applying refractory cement both under the parts and in contact with the oven door. Now position the arch, applying refractory cement both below and in contact with the shoulders. Finally, position the hood, applying refractory cement.
Any spaces between the hood and the oven dome, resulting from the fact that the dome is hand made, will be filled with the insulation.
Form a first layer of insulation above and around the entire dome of at least 10 to 15 cm of concrete made from lime and expanded clay 3 to 8 mm. Apply a second insulating layer consisting of rock wool matting, glued directly onto the first insulating layer.
Construct the external facing. Options include enclosing walls and a roof (like a little house), applying a metal support mesh for subsequent plastering and waterproof painting (as in the video/photo), or it is possible to apply facing bricks or stones, following the shape of the dome. The important thing is to protect the structure as well as possible from humidity and infiltrations of water.
Connect the end of the hood to the chimney. If the oven is assembled outdoors, the chimney stack should extend at least 3 meters above ground. It is important that there is no weight bearing on the oven dome.
